Talbott is a principal owner and founder of the Otter’s Chicken Tenders Restaurant concept and opened the first restaurant with his partners in September of 2003. He has been responsible for many aspects of the business including business organization, financing, site selection, design, construction and development. Talbott brings his experience as an attorney and successful entrepreneurial ventures to the company. After practicing business transactional law for 3 years (1999-2002) in Baton Rouge, LA, Talbott moved to Nashville where he started OCT and a real estate consulting and brokerage company. Talbott graduated from Millsaps College in Jackson, MS in 1996 and also received his law degree from LSU Law School in Baton Rouge, LA in 1999. Talbott was recently featured as one of the Top Young Entrepreneurs in Nashville in 2006 by the Nashville Business Journal and continues to focus on the growth of Otter’s Chicken Tenders.

Stuart Ottinger

Stuart is a principal owner of the Otter’s Chicken Tenders Restaurant concept and opened the first restaurant with his partners in September of 2003. Stuart has overseen operations at several locations of OCT and has been involved with every aspect of the business since its inception. Stuart graduated from the University of Mississippi in 2001 and also worked at SunTrust Bank prior to starting OCT.

Steve received his undergraduate degree in 2001 and masters in business administration degree in 2002 from the University of Mississippi prior to starting OCT.

Charles Fitzgerald

Charles is a principal owner of the Otter’s Chicken Tenders Restaurant concept and opened the first restaurant with his partners in September of 2003. Charles has assisted with legal matters and financial aspects of OCT since its inception. Charles received his undergraduate and law degree from Louisiana State University. Charles has practiced law since 2001 in private practice in Lafayette, LA.
Joey Coppage
Chief Operations Officer
Joey has served Chief Operating Officer of the Otter’s Chicken Tenders Restaurant concept since November of 2004. Joey has 20 years of operations experience through his employment as a Chick-fil-A Operator, Operator Consultant, and National Marketing Award winner. Under Joey’s guidance OCT has seen increased profits and brand awareness through implementation of new restaurant procedures and break-even analysis. Joey is focused on the growth of Otter’s Chicken Tenders and is a key player and co-owner in Otter’s Franchising, LLC, the franchise development arm of OCT. Joey received his undergraduate degree from Western Kentucky University and his MIS in Business Administration from Murray State University.
